and another vegan sugar cookie recipe

this is the one I'm actually making the weekend of OM DA/Garvin's Birthday

1/2 cup shortening (original Crisco)
3/4 cup sugar
3 teaspoons Ener-G Egg Substitute
4 tablespoons water
1
teaspoon REAL vanilla extract
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons rice milk
  1. In a large bowl, cream 'butter', sugar, egg replacers + water, and vanilla.
  2. Add flour, salt, and baking powder.
  3. Mix well and begin to form a dough.
  4. Add enough rice milk to moisten the dough (more 'butter' might help too, you'll just have to play with it until a dough is formed).
  5. Refrigerate for 1-2 hours.
  6. Once it's ready, roll dough to desired thickness, approximately 1/4 inch thick, and use cookie cutters to form shapes. You could also just make these into rounds.
  7. Place cookies on a cookie sheet lined with parchment paper and bake at 350 degrees for 8 minutes or until just starting to brown.
  8. Cool on racks.
